Super Carrot Raisin Salad

Ingredients:
     ·  Approx. 3 medium carrots (2 cups peeled and shredded)
     ·  ½ cup golden raisins
     ·  ½ cup chopped fresh or canned pineapple in natural juice
     · 1 TBS chopped fresh cilantro
     ·  ½ cup chopped walnuts

Dressing

     ·    2 TBS canned coconut milk (shake can to blend well before opening)
     ·   ¼ tsp turmeric
     ·    ½ TBS sweetener - optional (i.e., pineapple juice for vegan recipe, honey)
     ·   1 tsp orange zest
     ·   1 TBS fresh lemon juice
     ·   1 TBS extra virgin olive oil
   ·   1 tsp salt
    ·   ¼ tsp pepper 

Directions:
Blend all dressing ingredients together and combine well with a whisk.

Wash and chop cilantro.

Chop walnuts coarse.

Shred carrots.

Mix carrots with raisins, walnuts and pineapple, and toss with desired amount of dressing.

Stir in chopped cilantro.

Yield: 7 side dish servings.
