What are 6 things you could do to add vitality, creativity and a sense of mindfulness to your cooking? Explore these techniques and enjoy upbeat exercises to discover conscious cooking that enhances prana and honors the yamas and niyamas. You’ll also receive a copy of our resource lists for great vegetarian cookbooks, selected recipes and wonderful websites to nourish your mind, body and spirit.
All about Dal
Rich in iron, protein and B vitamins, “dal” (split peas/lentils/legumes) is an excellent and versatile staple of the Vedic diet. Certain dal preparations are the preferred menu of many enlightened souls in ashrams across India as well as healthy plates across the country. With well over 60 types of dal to choose from, this workshop presents an easy to prepare basic recipe that may be modified to suit a variety of dals (from the very rich urad dal to the more easily digested moong dal) for lunch or dinner nourishment. We will also discuss the best lentils to use for making fresh healthy sprouts! Don’t be intimidated by the sophisticated use of spices and herbs in Indian cooking - soul satisfying dal is easy to make!
Savory Snacks & Appetizers!
Sure to make everyone smile, these tasty savories can serve as a snack, elegant appetizer or even a light meal with a salad. Class menu may include one or more of the following:
- Cauliflower, potato and pea samosas served with a refreshing mint (podina)chutney.
- Veggie pockets get rave reviews by combining caramelized cabbage, selected vegetables and just the right
spices in a delectably easy to make dough. This versatile dough is also perfect for baked apple, cranberry
raisin (or other fruit) pockets dusted with confectioner's sugar.
- Spicy potato wedges to please the crowd! We will share our secrets to ensure your potatoes are baked to
crispy perfection in the oven.
Simple Salads
So good for your health, these almost raw salads are easy to prepare and will keep them asking for more! Class menu may include creative use of the following ingredients: cabbage, coconut, red beets (yum!), carrots, green/red/yellow/orange peppers, tomatoes, cucumbers, string beans, black beans, variety of nuts, plain yogurt, etc.
